CSA Haul Recipe of the Week: Crispy Potato Wedges with Truffle Oil

Sometimes there’s nothing more comforting than some good old-fashioned fried potatoes. Ordering fries at a fast food place may be easier, but making your own potato wedges can be surprisingly satisfying. On top of being healthier than fast food fries, making your own wedges means that you can doctor it up with better ingredients and seasonings.
This recipe is almost as easy as driving out and fulfilling your fry craving. You don’t even need to fry these! The cornstarch and bread crumbs create that crispy outside that a deep fryer would typically provide and the truffle oil that’s used just adds a nice umami flavor to the whole dish. Feel free to just use sea salt as your seasoning, but use our suggested seasonings for that classic potato wedge taste.

Crispy Potato Wedges with Truffle Oil

 

INGREDIENTS

  • 1 lb Red Potatoes
  • 2 Tbs Truffle Oil
  • 1 Tbs Nutritional Yeast
  • 1 Tbs Cornstarch
  • 1 Tbs Panko Bread Crumbs
  • 2 tsp. Paprika
  • 2 tsp. Garlic Powder
  • 1 tsp. Cayenne
  • Salt and Pepper

 

DIRECTIONS

  • Cut potatoes into wedges.
  • Combine all ingredients in mixing bowl until potatoes are well-coated.
  • Bake for 25 min at 425, longer if you like them extra-crispy with little burned pieces 🙂
